Caught right off the coast of San Francisco, halibut is the ultra-local catch we absolutly love. Its perfect texture and sweet flavor makes it a fan-favorite fish for pretty much any dish–from crudos, to tacos, to fish burgers, and everything in between.

Tasting notes: An excellent eating fish, its meat is firm, white, and low in fat, with a mild, sweet flavor.

How they're fished: We work exclusively with small, hook-and-line fishers to source our California halibut.

Where they're caught: Caught ultra-locally in San Francisco Bay and along the Mrin Coast by Chris Franks of Hook to Table Fish Co.

Serve it Hog Island Style! Halibut’s tender texture and clean flavor make it a great choice for sushi, sashimi, and crudo, but takes to all standard preparation methods, including baking, broiling, grilling, deep-frying, and panfrying.
