From the farm kitchen in Marshall, locally caught, Black Cod. Black Cod is a favorite of ours here at Hog Island and a total sleeper hit. It’s delicate and buttery, with a high fat content which makes it perfect for smoking! Brought to us by Chris Franks of Hook2Table.
Our resident fish smoker, Jamie, cures this black cod with fennel, coriander, bay, and black peppercorns for a few hours. Then hot smoked on our Traeger Smoker. The perfect addition to salads, dips, snack plates, or just packed as-is for a hike or picnic.
