Located in a cold, pristine deep water fjord, carved out centuries ago by glaciers, Effingham oysters are grown in stackable trays suspended from rafts that raise and lower depending on the season. They’re grown close to the surface in the winter, where food is most available, producing the plumpest happiest oyster possible. In the summer, the trays are lowered 25 meters to keep them in cold, crisp water, which prevents them from spawning and keeps the oyster firm and sweet. The oysters are tumbled every 4 to 6 weeks which gently chips the shells, simulating the tumbling of oysters on a beach. This process promotes stronger shells and deeper cups.

Effinghams have a unique, sweet, and sea-salty flavor with a buttery finish, and they have a deep, beautifully colored cup. Their flavor changes depending on the time of year, depth, and available plankton in the water column.

Mediums are the largest-sized oyster, best suited to frying and baking.
