How to shuck an oyster

Grown by N. Sea Oyster Co. Dukes of Topsail are a beautiful Atlantic Oyster grown on the coast of North Carolina. Open ocean salt engulfs the nose and palate as soon as the shell hits the lips and ends with an incredibly sweet, scallop-like flavor.

Tasting notes: With a nice, full-bodied texture and high salinity, Dukes have a strong butter and salt flavor with subtle notes of umami and celery.

How they're grown: Cage grown primarily on a 300-foot suspended longline utilizing a mixture of Australian and French oyster farming techniques.

Where they're grown: Grown in the blue-green nutrient-rich waters of Topsail Island, NC–a long, skinny barrier island that separates the Intracoastal Waterway from the Atlantic Ocean.

Sizing: These oysters are the perfect size to eat raw on the half-shell.
