An East Coaster out West. Hog Island is one of only two west coast oyster farms raising this classic East coast oyster variety.

Tasting notes: Firm texture with a high brine and a mineral, herbaceous finish.

How they're grown: Our Atlantics are grown using a traditional French technique called rack and bag.

Where they're grown: Planted, grown, and harvested by Hog Island in Tomales Bay.

Sizing: Atlantics are the perfect size to eat raw on the half-shell. They range from 2-3.5" in length.
