There’s a new bivalve in town: Hog Island Highwaters! The first-ever batch of Pacific Oysters to be grown from seed to shell all at our Humboldt Bay Oyster Farm.

Tasting notes: A light brine, seaweed umami, and an earthy finish—a flavor profile that's entirely Humboldt Bay!

How they're grown: Our Highwaters are tide tumbled in seapa baskets high in the mudflats.

Where they're grown: Planted, grown, and harvested by Hog Island in Humboldt Bay.

Sizing: Extra smalls are the perfect size to eat raw on the half-shell. They range from 2-2.75" in length.
