Our take on the classic oyster mignonette! Using a 50-50 blend of unseasoned rice vinegar and seasoned rice vinegar gives the perfect balance of acidity and sweetness, pairing beautifully with minced shallot, seeded jalapeño, and freshly chopped cilantro for a bright and zesty condiment. It has become Hog Island's signature raw oyster topping, served at all of our restaurants. It also makes for an excellent Bloody Mary garnish!
Instructions: Keep jars refrigerated until ready to use. Combine ingredients of both jars, plus the juice of 1 lime, in a bowl just before serving.

2-oz. jar of minced jalapeño, shallot, and cilantro
