Tasting notes: Slightly nutty with a subtle sweetness and mild brine that reflects its Pacific habitat. Many describe it as sitting somewhere between lobster and large prawns—sweeter and more delicate than shrimp, but leaner, firmer and less intense than Maine lobster.
